Chex Mix is a holiday staple that can be made to fit any theme or taste. A friend of mine from Instagram shared this Butterbeer Chex Mix recipe and I knew I had to try it! Butterbeer Chex Mix is perfectly sweet, crunchy, and magically transports your taste buds right into the world of Harry Potter!

If you’re a Harry Potter fan, you know there is nothing like wanting to try some of the food from this magical Wizarding World. Butterbeer is first mentioned by Ron in The Prisoner of Azkaban, and we as the audience have been hooked ever since. A tasty beverage of butterscotch and cream, Butterbeer is magic in its own right. But turning this drink into a crunchy snack is pure magic too.

So, wands at the ready! Time to make @TheEnchantingEnchanter’s magical Butterbeer Chex Mix!

Butterbeer Chex Mix Recipe

• 1 box cereal
• 1 cup butter
• 1 bag mini marshmallows
• 2 cups cashew butter
• 2 teaspoons vanilla extract
• 3 cups butterscotch chips
• 4 cups powdered sugar

Pour all cereal in a large bowl. I used a mix of Crispix and Rice Chex. You can choose any similar cereal, but I like these because the flavors are mild and the shape of the Crispix seems more magical. What do you think?

Melt butter, butterscotch chips, cashew butter, and vanilla together in a sauce pot over medium heat. Cashew butter can be a little difficult to find, but I have had success at Trader Joe’s and Vons.

Pour the butterscotch mixture over the cereal and mix gently. This is where Mrs. Weasley’s self-stirring cauldron would come in handy, but see my personal favorite spatula for this very step here.

Allow to cool.

Add powdered sugar and marshmallows and mix gently.

Top with additional marshmallows and serve in a Butterbeer stein for full cheers-worthy wizarding aesthetics!
